HEALTHY LUNCH: Chef Salad w/Homemade Dressing

I am always on the quest of finding easy, cheap, low cal, healthy and filling lunch ideas. This one is high on my list. We've all seen the chef salad done before. It's not a secret find or anything spectacular. But what I do love about this meal is the fact that it's clean, VERY filling and super yummy. Not to mention, only 353 calories! 


I found this recipe on Blogilates, one of my current obsessions. Blogilates is by Casey Ho, a pilates instructor living in LA. Her blog is chock full of workout videos on YouTube, monthly workout calendars (which I have been using for a few months now and they kick my a**!) and many clean eating recipes. For the salad:

  • 1/4 cup sliced cucumber
  • 2 tbs sliced almonds
  • 2 hard boiled egg whites - chopped
  • 1/2 cup tomato - chopped
  • 2 cups romaine lettuce - chopped
  • 2  oz deli turkey breast - chopped
I feel like putting together a salad is pretty self explanatory, but on the off chance that you've never done it before: 
  1. Prepare all ingredients accordingly (chop and slice)
  2. Mix all ingredients in a bowl

For the dressing:

  • 1 tbs lemon juice
  • 2 tbs apple cider vinegar
  • 1 tbs extra virgin olive oil
  • pinch of dried oregano
  • 1 tsp dried basil
  • 2 garlic cloves
  • 2 tbs fresh parsley (optional)
Now this is where the fun happens! I say the parsley is optional because I personally don't like how chunky it makes the dressing. I have made it with, and it tastes great. I have made it without, and it tastes great. Plus, it's a waste to buy a whole bunch of parsley and only use a few leaves. I just find it more efficient to cut it out. It's going to taste just as good one way or the other.


  1. Mix all ingredients in a bowl and whisk together with a fork. 

Et voila!

    My attempts at making tasty salads have been a bit poor so far, but this looks promising...
